Ingredients1 lb of fish fillets, flaked
1 lb of mashed up potatoes
2 tsp of butter
1 tsp of lemon-pepper seasoning
3 tsp of parsley
1 egg separated
1 egg beaten
1 cup bread crumbs
1/4 cup of Parmesan cheese
salt and pepper
olive oil for pan
1. Boil fish in pan of water. Lower heat and cook until fish flakes easily. Remove fish from water and allow to cool. Remove bones and skin if necessary.
2. In bowl, mix fish, mashed potatoes, butter, lemon-pepper seasoning, butter, and egg yolk. Season with pepper to taste.
3. With floured hands, roll 8- 10 balls and flatten into a patties.
4. Beat the remaining egg white with the other egg. Mix breadcrumbs and Parmesan cheese in another bowl.
5. Dip patties into the egg mixture and then the bread crumb mixture.
6. In a medium heat frying pan, cook fishcakes 3-5 minutes on each side until crisp and golden.
