Greek Viniagrette Drum Sticks and Potatoes


"It tastes it came from heaven" says the five year old. "The peas taste like the came from someplace else" says the seven year old! OK, so the peas were from a can and not so good, but that is high praise from my five year old!


Greek Viniagrette Drum Sticks and Potatoes
Ingredients:
6-8 chicken drum sticks
6 red potatoes quartered
1 cup of flour
olive oil or oil spray
Greek vinaigrette dressing
palm full of chopped green onions and chives
1 teaspoon of garlic
1 teaspoon of salt
Preheat oven to 425

1. Mix half a bottle of Greek vinaigrette dressing, garlic, salt, and onions and chives in bowl.
2. Toss in chicken and potatoes. Put lid on bowl and mix it up.
3. Marinate for a few hours
4. Oil a pan that has a rack. I used a baking sheet with a cooling rack.
5. lightly coat the marinated chicken with flour. Try to keep the green onions and chives stuck to chicken under the four.
6. Arrange chicken and potatoes on rack.
7. Brush some of the remaining marinade over the chicken.
8. Cook in oven for 40 minutes. Turn over potatoes and chicken and cook for an additional 15.

Serve and enjoy!
